I also considered using before_create to create the users in the helper, but the problem is that the category needs to be included in the create request, so I need some way of accessing it in the helper. I was thinking that I could also extract the callback to the UsersHelper module, and call it from the controller, but the problem is, I need the class to return a block, and I don't know how to set the return type.
