My name is Callum Heald and I am a General Manager for Icon Legacy(ICONINK). I spent the last 6 years managing restaurants for ICONINK in Toronto. I graduated from Business Administration in Melbourne University & Hospitality Operations in Mooloolaba Tafe. I have extensive knowledge of what it takes to manage a Restaurant, Pub or Bar successfully that would be a great asset to your company.
I have worked for Icon legacy/ICONINK for the last six years. My position was a unique one for the company. I started at Byblos when they first opened and helped open and setup the foundation for a successful restaurant. I was then transferred to do the same with Citta, la Societe, Weslodge, Batch House, Mira, Kost, & then opened The Fortunate Fox in the Kimpton Hotel. I oversee Budgets, Training, Scheduling, Setting up Silverware for each restaurant, Cogs, Maintaining programing and advertising & all health & safety plus much more.
I managed Scheduling, Stock control, all staff training, Profit & loss, Budgets and Ordering. All table orders were to be done by memory, All food on menu needed high level of knowledge. Extensive wine list knowledge was also expected of all Floor staff.
Cafe au lait is a cafe restaurant(160 cap) that specialised in Coffee(full trained baristas) Breakfast, lunch and french dining. I Managed Hiring and training of staff, applied Victorian standard policies and procedures, worked extensively with work safe (gov) in implementing correct policies, profit and loss, scheduling, staff training, point of sale, worked with budgets, profits and of course creating beautiful and consistent coffee's in a very busy and locally famous Cafe.
Beaches Is a Large Restaurant/Bar/Hotel(800 seating cap) in the Whitsundays. I Managed hiring and training of Staff, Policies and Procedures, Licensing accords, Schedules, Costings, Profit and loss, Stock control, Ordering, Live music schedules, Games for The "after boat parties", Events (new years eve, Football Clubs etc.) Hiring of all staff, Running training sessions, Staff meetings, Concentrated use of iControl (pos) and Task manager.
